Tasty Pumpkin Nuggets

Last time, I showed you the way on how to make your cozy pumpkin soup. How's your experience? Did you like it? I love to hear your comment below.

Today, another pumpkin-citing dish is what I am going to share, but before anything else, let me give you some idea of the health benefits of pumpkin.

- Pumpkin is rich in beta carotene which your eyesight bright.

- It is also surprising that it is good for the heart.

- Like tomatoes, it helps your skin glow.

- Lastly, it maintains your immune system.

Now you already know it's benefits, let's start cooking!

Ingredients:

1/4 shredded pumpkin meat

1 small onion

3 cloves of garlic

4 pieces of mashed tofu

2 eggs

2 tablespoon of pepper

2 tablespoon chili powder

500 Gram All-Purpose Flour

250 Gram Glutenous Rice Flour

Breadcrumbs

Vegetable Oil

250 Gram of Crispy Fry (Alternatively you can use All Spice) *by the way, this is only optional.

This serving will make around 50 Nuggets.

Procedure:

1. In a big bowl, place your pumpkin meat, mashed tofu, onion, garlic, pepper, and chili powder then mix them all together.

2. Once mixed completely, add your rice flour, all-purpose flour, and 25 gram of crispy fry. (if you have kidney issues, hypertension and any diet that is limited from any sodium intake either you eliminate this or alternatively replace this with herbs.)

3. Add 2 eggs.

4. Mix the mixture until its texture began to be chewy looking.

5. In a separate space, place an aluminum foil.

6. On the aluminum foil, place a large amount of your scooped mixture and formed it into a large rectangle. *Note: the thickness should be at least 0.5 inches so that kids who'll eat it will love it and will not know that it's a

7. Cut the nuggets into small rectangle size: 1.5 inches by 2.5 inches or you can shape it to your desired shape.

8. Coat the nuggets with breadcrumbs.

9. Heat your pan with oil to 350 degrees at low medium heat.

10. Fry the nuggets until golden brown. *Note: You don't need to deep fry the nuggets.

11. Drain oil using absorbing material such as tissue and serve this with your preferred sauce.
