NO BAKE! Mocha Banana Cake

Are you bothered of your bananas being spoiled? No problem on that! You can turn your banana into something delicious and healthy for yourself and your family!


Yes I can hear you that the quarantine is taking too long and you have some perishable goods and one of them is banana. Banana reaches its peak of nutrients when its skin starts to darken. It means the dark the skin is the healthier the banana is.


Let's get it down to this healthy, fruitylicious cake!


Ingredients you needed:

4 pieces of bananas

340 grams of all purpose flour

120 grams of all purpose flour

75 grams 3 in 1 coffee

50 grams of chocolate cocoa

3 eggs

2 tablespoon baking powder

1 tablespoon baking soda

1/2 teaspoon salt

12 spoons of granulated white sugar

4 tablespoon butter

1 tablespoon of oil

Parchment paper

Nuts (optional)

Cinnamon (optional)

Vanilla extract (optional)


Steps in making your mocha:

1. In a big bowl, place 50 grams chocolate cocoa, 120 grams all purpose flour, and 75 grams of coffee and mixed them altogether with a wire whisk.

2. Add 1 egg to the mixture and add water at least 25 ml.

3. Mix them altogether until everything looks hemogenous.

4. Set it aside.


Steps in making your banana mixture:

1. Crushed your banana in a bowl.

2. In a separate bowl, melt the butter in 1 spoon of oil in a very low heat.

3. Let the melt butter cool down.

4. Once the butter cool down, add the granulated sugar to it.

5. Mix the combination of butter and sugar.

6. Once completely mixed, add and beat your first egg in the mixture.

7. Once beaten, add the other egg and beat again.

8. When butter, sugar, and eggs are mixed well together, put in your bananas and mix well.

9. After mixing well, place in the same bowl the 340 grams of all purpose flour, 2 tablespoon baking powder, 1 tablespoon baking soda, and 1/2 teaspoon of salt.

10. Slowly mixed them altogether until it become homogenous.


Some people prefer to add some cinnamon powder or vanilla extract in their banana. However, I didn't add those in mine because I simply don't have them at home since we cannot go outside due to enhanced community quarantine. That's why I skipped them.


When I made this, I am lucky to see some homemade chocolate block by my sister from the fridge. My dad also has some reserved nuts. I want them to be a topping for it.


With this recipe I will be using an old rice cooker pot from my old broken rice cooker. If you don't have a pot like this, a regular pot may do.


Steps on cooking your mixture:

1. Butter the bottom and sides of your pot.

2. Place in a parchment paper at the bottom of the pot. It will help you release the cake smoothly from the pot.

3. Butter the top of your parchment too.

4. Pour in the banana mixture in the pot.

5. Pour in the chocolate mixture in the pot.

6. By using a fork, start to draw small number eights inside. Making the colors quite mixed.

7. Cover your pot.

8. Place it in the stove for 10 minutes at low medium heat. Do not open the lid.

9. After 10 minutes, do not open the lid and just change the heat to a very low heat.

10. Let the cake cook within 20 more minutes.

11. After 20 minutes turn off your stove and wait for the cake to cool down.

12. After cooled down, transfer the cake in a plate and enjoy the scrumptious taste of it!
